ATP Nitto Finals - Unique Pastry designs by Turin Pastry Chef Designer Fabrizio Racca

Among the pastry chefs in the country, Fabrizio Racca  has gained attention for the aesthetic presentation of his desserts, which can be attributed to his studies in design. The 42-year-old studied industrial science at the Polytechnic of Turin and graduated with a thesis on the design of the gastronomic experience. During his studies, he developed an interest in sweets, initially focusing on ice cream at a first shop in Collegno, which he started with his brother. In 2016, he expanded to include desserts and opened a pastry shop in the Santa Rita area, followed by two additional locations. Recently, he opened a pop-up at Turin-Caselle airport for travellers. His recipes feature unique and refined combinations, delivered in clean, colourful, minimal products designed precisely.

"Gather Together” is a dessert designed for two people to enjoy. It was created for the Nitto ATP Tennis Finals in Turin that attracts fans worldwide, whether they watch in person or from afar. The dessert features a log with coconut and passion fruit flavours, decorated with spheres of various sizes resembling tennis balls, on a shiny and satin surface with contrasting colours. The design aims to reflect the balance and precision of sport.

 


The small modern cake will be previewed during a gala dinner that initiates the Lavazza Experience calendar, one of Turin's current events. It will subsequently be available at the counter throughout the tournament days. For the pastry chef-designer, this will be part of an ongoing collection with limited editions pastry named Together. Each edition aims to convey a different message through haute patisserie.
