The air, the mountains and the weather. They are the fundamental ingredients, together with the meat of course, of one of the greatest Italian delicacies. San Daniele Ham. Protected since 1990 by the European Union as a PDO product "due to the particular union of physical, natural and human factors" that contribute to its birth, for almost forty years. The food and wine festival Aria di Festa dedicated to Prosciutto di San Daniele will enliven the streets of San Daniele in Friuli with events to celebrate the deep bond that unites San Daniele with its territory of origin: live cooking, thematic talks with prominent guests, master classes and sensory workshops, guided tours of the ham factories are just some of the activities that await you. The historic center of the town will be populated by food and wine stands where it will be possible to taste the ham in combination with cheeses, bread products, fruit and numerous other dishes. That is Aria di Festa which from 30 June to 3 July will invigorate San Daniele in Friuli, home of this great delicacy. And it will do so for the 37th edition.
Alongside the talks, there are also other 360° experiences such as picnics in the garden of Villa Serravallo and ham and wine tasting at Terrazza San Daniele, with an important view over the surrounding hills. Furthermore, the meeting for this year between Aria di Festa and the final stage of Folkest, the festival dedicated to world music artists which this year will close in San Daniele del Friuli during the event, is a unique novelty. Aria di Festa will also be an opportunity to discover the historical-artistic beauties, such as the Guarneriana Library, and the naturalistic beauties of the place with guided tours of the city and the surrounding area. The schedule will not lack events dedicated to other regional excellences, the wines of Friuli-Venezia Giulia and conviviality.
Involtini di asparagi con prosciutto San Daniele e crema di Montasio
Ingredients:
200 g of Montasio Dop Sapori&Dintorni; 200 ml of fresh cream; 100 g of grated Parmigiano Reggiano Dop; 4 slices of Prosciutto San Daniele Dop Sapori&Dintorni; 12 green asparagus from Altedo IGP Sapori&Di
Preparation:
To prepare the asparagus rolls with ham and montasio cream, clean the asparagus, steam them or blanch them in a little water for a few minutes trying to keep them crunchy. Once the asparagus is ready, leave it to cool in water and ice. Gently dry the asparagus and delicately wrap them, in groups of three, with a slice of raw ham, placing them on a baking tray. Sprinkle the rolls with the grated Parmesan and leave them to brown in the oven for a few minutes. In the meantime, melt the diced Montasio cheese in a saucepan together with the fresh cream: once the cream is ready, keep it warm. When the asparagus is ready, serve the asparagus rolls with San Daniele ham on top of a layer of lukewarm fondue.
